Kickstart your morning with the famous Andhra specialty—Crispy Green Moong Dal Dosa (Pesarattu)! Made with whole green gram (sabut moong), fresh ginger, green chilies, and cumin, this high-protein, zero-rice breakfast requires no fermentation at all!
In this video, learn the golden batter consistency secret to making paper-thin, crispy pesarattu that doesn’t break on the tawa, plus the classic Allam Pachadi (Ginger Chutney) pairing guide!
🥞 Prep Time: 10 mins (plus soaking)
⏰ Cooking Time: 10 mins
🍽️ Servings: 5-6 dosas
📋 Ingredients:
Batter Base: Whole Green Moong Dal / Green Gram (1 cup, soaked 4-6 hours), Rice or Flattened Rice / Poha (2 tbsp, for crispness), Fresh Ginger (1 inch), Green chilies (2-3), Cumin seeds / Jeera (1 tsp), Salt (to taste), Water (for grinding)
Topping & Cooking: Finely chopped Onions, Chopped Coriander, Slit Green chilies, Desi Ghee or Sesame oil for cooking
👩‍🍳 Quick Steps:
1. Grind Batter: Blend soaked green moong, poha, ginger, green chilies, cumin, and a little water into a smooth, pourable batter. Add salt and mix well.
2. Prep Tawa: Heat a cast-iron or non-stick tawa, sprinkle a few drops of water, wipe clean, and pour a large ladle of batter.
3. Spread & Top: Spread thinly in concentric circles from the center outwards. Immediately sprinkle finely chopped onions and coriander on top, pressing gently.
4. Crisp Up: Drizzle a few drops of ghee around the edges. Cook on medium flame until the bottom turns golden-brown and crisp.
5. Serve: Fold and serve piping hot with traditional Andhra ginger chutney (Allam Pachadi) or coconut chutney!
