Going to try this
I have seen and heard about using a pepper to substitute bread before. May have to try it. Also, I love curry, lots of flavor. Thanks for sharing these lunch ideas!
these lunches are solid but the protein count is what actually keeps you full until dinner. been on semaglutide through form blends and even with appetite suppression, meals under 25g protein have me hungry again in 2 hours
Love the ideas and can't wait to try them. The third lunch, which is the adult lunchable, is of concern for several reasons. First, I wouldn't put almonds in there since they could get soggy. Second, for the hard-boiled eggs, you need to be able to take off the shell. plus you need salt and pepper. Third, I don't see a problem with having a slice of bread or some crackers to go with this. Carbs ARE NOT the enemy, and you don't have to cut all carbs out of your life.

I wish I could get an organic roasted chicken at the store!! But when I do get a roasted chicken, I take all the meat off immediately and then make a soup broth with the bones and skin. It always produces a great broth with lots of collagen.
I find I am so full when eating so much. How do you do it?

I had never considered using bell peppers as a bread substitute. Luckily, I had bought 5 peppers this morning, so I will try this with homemade tuna salad later today.

I think for a bell pepper sandwich, I would use a red/yellow/orange pepper. The green pepper can be bitter.

Just made it tonight with orange bell pepper. Cause I hate the green 😅. Sorry for those who love, no offence! This is amazing and we can replace the turkey with so many great low sodium options of meat! I ate with turkey anyways and don't see any problem with the sodium every now and then.
Hi!! This is super helpful!! I am curious though, about the "Adult Lunchable"- I am lactose intolerant. What can I sub instead of cheese? I read smoked salmon might be an option?
I do a lot of variations on chicken salad – curry is great, and as a tip, if you add a little sprinkle of black mustard seed, you get a nice little pop of flavor. Another variation I do is broccoli slaw, green onion, chicken, yogurt, and chili crisp – even better if you have some fresh thai basil (or regular basil).
