* Approximately ½ cup olive oil (use less if preferred)
The Veggie Crew 🫑🍠
* Sweet bell peppers
* Sweet potatoes
* Or whatever vegetables are patiently waiting in your fridge!
The Rice
* 1 cup brown rice
* Approximately 1½ cups water to start, adding more as needed
👩🍳 Let’s Get Cooking!
Step 1: Wake Up That Oven! 🔥
Preheat your oven to 400°F (200°C). Let the oven do the hard work while you prepare the stars of the show.
Step 2: Give That Chicken a Spa Treatment! 🍗
Make a few small cuts in the chicken using a fork so the flavours can get right in there.
Squeeze in the fresh lemon juice, then sprinkle all your spices over the chicken. Add olive oil and massage everything together.
Yes, massage! That chicken deserves some attention before going into the oven. 😂
Step 3: Bring Everyone Together! 🥔🫑
Lightly grease your baking pan. Arrange the marinated chicken, sweet potatoes and bell peppers.
A little tip from my kitchen: Sweet potatoes like to take their sweet time! Microwave them for approximately 5 minutes before baking so they don’t leave the chicken waiting at the dinner table.
Step 4: Rice Joins the Party! 👯♀️🍚
Add your brown rice to the pan with approximately 1½ cups of water to start.
Splash a little water over the rice, as shown in my video. Bake everything together, stirring the rice occasionally and adding more water as needed until the rice is tender.
Step 5: Let the Oven Work Its Magic! ✨
Bake for approximately 25–30 minutes as a starting point, but don’t rush the chicken!
Cooking time will depend on the size and cut of your chicken. Make sure the thickest part reaches an internal temperature of 165°F (74°C), without touching the bone. Check that the rice and vegetables are tender too.
And there you have it! Puk Puk Chicken Sheet pan Chicken plenty of flavour, colourful veggies and a satisfying meal for your family🤲❤️
