Ingredients
– 1 packet of kelp noodles (340g)
– 5g of baking soda
– 350g of lean beef (I used beef rump)
– 30g of minced garlic
– Dash of cooking alcohol
– Salt and pepper to taste
– 150g of grated carrots
– 200g of sliced zucchini
– 200g of mushrooms of choice (we used snow fungus)
– 45g soy sauce
– 25g oyster sauce
– 10g of sugar
– 200g of water spinach
– 10g of stevia
– 10g of sesame oil
– 50g of garlic chives
– Sesame seeds to garnish (optional)

Method:
1. In a bowl, soak the kelp noodles in baking soda and boiling water for 20 minutes. You can cut the noodles here if you want them to be shorter. After 20 minutes, rinse and drain the noodles 2-3 times, and set aside.

2. In a hot pan on high heat, add beef and minced garlic, and stir until meat is browned.

3. Add a dash of cooking alcohol, salt, and pepper, and stir for another 30 seconds to 1 minute.

4. Add carrots, zucchini, and mushrooms. Stir until the vegetables soften.

5. In a separate bowl, combine soy sauce, oyster sauce, and sugar to make the sauce. Then add it to the pan and mix.

6. Turn the heat down to low and add the water spinach. Mix until the water spinach softens and reduces in size. Then add the kelp noodles and mix until everything is combined.

7. Turn off the heat and add stevia, sesame oil, and garlic chives to the pan. The residual heat should be enough to continue cooking everything.

8. Finally, garnish it with sesame seeds and enjoy! 🫶🏼
