🧀 HOMEMADE VEGAN MOZZARELLA BALLS

🧀 HOMEMADE VEGAN MOZZARELLA BALLS
🔥 Cauliflower & Silken Tofu Mozzarella — Healthy Vegan Weight Loss Style!!

I was a VEGAN CHEESE MAKER for over a DECADE, and since losing 66 lbs, I’ve learned how to turn my favourite vegan cheeses into delicious, lower-calorie-density versions! 😍

Today we’re turning a humble CAULIFLOWER into the most incredible SOFT, STRETCHY and CREAMY vegan mozzarella balls!

Traditional vegan cheeses often rely on cashews and coconut oil, but this version uses cauliflower and silken tofu for a lighter, protein-boosted alternative! 💚

And we’re serving it on delicious crispy SWEET POTATO TOAST with tomatoes, fresh basil and balsamic drizzle! 🍅🌿

Ingredients:

For the Vegan Mozzarella:

🥦 1 cauliflower
🌱 2 packets silken tofu
🧀 Generous amount of nutritional yeast
🍋 Plenty of fresh lemon juice
🥄 A generous amount of tapioca starch
🥛 Soy milk, as needed for blending
🧂 Salt, to taste

For the Sweet Potato Toast:

🍠 Sweet potato
🍅 Cherry tomatoes
🌿 Fresh basil
🍇 Balsamic drizzle

Method:

1️⃣ PREPARE THE CAULIFLOWER
Chop your cauliflower into florets and boil or steam until completely soft.

The softer it is, the easier it will blend into a deliciously smooth mozzarella base!

2️⃣ MAKE THE CHEESY MIXTURE
Add the cooked cauliflower to a high-speed blender along with:

🌱 2 packets silken tofu
🧀 Plenty of nutritional yeast
🍋 Fresh lemon juice
🧂 Salt
🥄 Tapioca starch
🥛 A splash of soy milk

Blend until completely smooth and creamy!

The nutritional yeast gives that delicious cheesy flavour, while the lemon adds acidity.
And don’t skip the TAPIOCA STARCH! It’s what gives the mozzarella its stretchy, gooey consistency! 😍

3️⃣ COOK UNTIL STRETCHY
Transfer your blended mixture into a saucepan and heat while stirring CONSTANTLY.

The mixture will start to thicken and become a little lumpy — keep stirring!

Eventually, it will turn into one big, beautifully stretchy, gooey ball of vegan mozzarella!

4️⃣ MAKE YOUR MOZZARELLA BALLS
Fill a large bowl with ice-cold water, plenty of ice cubes and a generous amount of salt.

Using two spoons, scoop small portions of the hot mozzarella mixture into the cold water.

Leave for approximately 5 minutes until the mozzarella balls firm up.

And there you have it — homemade VEGAN MOZZARELLA! 🧀

5️⃣ MAKE YOUR SWEET POTATO TOAST
Slice sweet potato into toast-shaped pieces.

Place in your air fryer and cook until tender and crispy around the edges.

6️⃣ ADD YOUR TOPPINGS
Top each piece of sweet potato toast with cherry tomatoes, pieces of your homemade mozzarella, fresh basil and a little balsamic drizzle.

And ENJOY! 😍

The mozzarella is SOFT, CREAMY, SQUIDGY and absolutely DELICIOUS!

This is exactly how I love eating for maximum weight loss — finding ways to enjoy my favourite foods while keeping the calorie density lower and adding more plant-based protein.

Whether you’re trying to lose weight, build muscle or simply enjoy delicious vegan cheese, you NEED to try this! 💚

  1. Just tried this with half the ingredients! Nice! I put sweet potato in air fryer after a few minutes in steamer though I should have steamed it longer. I ended up just using a bit of sourdough bread toasted with the mozzarella cheese.

  2. Think about eating dairy sometimes, when body signals you, you know its something…
Besides, people nowadays cant be 100% vegan…
Even Rudolf Steiner explained that removing dairy is not good for some reason…

  3. Some consider nutritional yeast bad for health, I personally can't tolerate it and use kombu powder for that umami flavor. Cauliflower is a great idea! Thanks for sharing ❤❤
