🍛 HUGE VEGGIE-PACKED BIRYANI
🔥 Healthy Vegan Weight Loss Style — Massive Portions & Low-Calorie-Density!
Biryani is one of my absolute FAVOURITE meals because it literally has everything in one dish — loads of veggies, rice, plant-based protein and an insane amount of flavour! 😍
Here’s how I make mine healthy vegan weight loss style while keeping those portions MASSIVE.
Ingredients:
🥦 Cauliflower, finely chopped
🥕 Carrots
🍄 Mushrooms
🫛 1 whole bag frozen peas
🧅 2 small onions
🍚 Rice
🌱 TVP chunks
🥣 Veggie bouillon
🥛 1 whole tub Greek-style soy yoghurt
🧄 Garlic granules
🫚 Ginger
💛 Turmeric
🌿 Coriander powder
🌿 Cumin
🤎 Cinnamon
🌶️ Curry powder
🧂 Salt
🌿 Fresh coriander
Method:
1️⃣ Finely chop your cauliflower and add it to a large bowl with the carrots, mushrooms and frozen peas.
2️⃣ Add turmeric, coriander powder, cumin, cinnamon, curry powder and salt.
3️⃣ Add an entire tub of Greek-style soy yoghurt and mix until all the vegetables are completely coated. Set aside to marinate.
4️⃣ Slice two small onions and water sauté them in a large pan until translucent.
5️⃣ At the same time, cook your rice until around 90% done.
6️⃣ Add TVP chunks and veggie bouillon to a bowl, cover with boiling water and leave for a few minutes to rehydrate.
7️⃣ Add garlic granules and ginger to your onions, followed by all the marinated vegetables and a splash of water.
8️⃣ Add your rehydrated TVP and cover. Let everything cook together for around 10–15 minutes.
9️⃣ Add the partially cooked rice directly over the top of the veggies and let it soak up all that gorgeous flavour.
🔟 Cover again and cook for another 5 minutes.
Finish with fresh coriander and ENJOY! 🌿🍛

This doesn’t even have biryani flavor ): you can say a dish was inspired by another culture’s dish, but this isn’t a vegan biryani in the slightest ):

You can use just a teaspoon of coconut oil in your rice and your onions.
I didn't look good until it looked good, and now I want some. You got an extra bowl?👀
Wow wow that looks nice beautiful gougous amazing cooking skills rice
Add mint too, it will taste 10x better
I put cinnamon sticks, star annise and whole pepper corns in with the onions. This then adds intense flavour. Before adding everything else.
I would not jump into that because I'm a 100% animal eating carnivore
That's not biryani for goodness sake.
How many portions there!!
